This is a really interesting discussion between Noma’s Rene Redzepi, Momofuku’s David Chang, and food writer (who’s books I love) Ruth Reichl. For those of you who don’t know, Noma is considered the #1 restaurant in the world (UPDATE! now #2). This video gives a little insight into the philosophy and inspiration behind Noma’s cuisine.
